Is there a Kerio Operator version running on Hyper-V availabe?
If not - is it somewhere on the roadmap?

I am already interested in this product for years, but the need for VMWare has always stopped me from buying the product.

Operator is past the End-of-Engineering dat, no new releases are planned.

On the other hand i have Operator running on Hyper-V on my Windows 2019 server.
Just loaded the linux iso image.
Works like a charm, have this running for years.
