Hi, if you downgrade like is written on the support page and don't disable updates first (which is not possible without admin rights), it will not last long, as the office still updates itself after some time (tested - next workday, also for Deployment tool option. But manual update is not possible, throws an error message).
I have switched users to monthly update channel. That is possible to do with C2R/Deployment tool for standalone & MS365 installs OR for MS365 users is possible to set channel and trigger update throught MS365 admin center.
There's also option for those, who runs Control & content filter: Block current channel CDN URL on content filter, that disables updates of MS Office/MS365. List of channel URLs is here.

one thing i have found if office is downgraded to 2203 or 2204, if you go to setup a new email account in outlook KOC offline does not exist as an option when creating a new account is it normally does.
If you try reinstall KOC it throws and error saying the version of outlook cannot be determined.
Then, if you do a full repair of office, then KOC offline will then reinstall, but still does not appear if you try to setup a new account....
