Yeah, the appliance has a small default disk. Here's the general steps you need to take:
- Shut down the Kerio server VM
- Create new data store of the desired size
- Add a disk to VM on the new data store
- Restart the VM
- Shutdown the kero mail service
- Mount the new disk (usually involves creating a sub directory and mounting the disk to it)
- backup the mailserver.cfg file (in /opt/kerio/, IIRC)
- Edit mailserver.cfg to point the mailstore to the new directory.
- copy/move all the files/folders from the old store folder to the new one
- Restart the kerio services
This is not a 100% complete list, but it's the general plan. Copying the existing mail is often a better idea, because it allows you to revert back to the previous configuration. Don't forget to modify the /etc/fstab file so that mounting the new disk survives a server reboot.

That's really beyond the scope of this forum. If you do not have a technical resource that you can call on, or if this is just a test lab and you are experimenting, Google can be your friend:
"add storage to ESXi 7"
"add a disk to a vmware virtual machine"
"mounting new disk in Linux"
"copying files in Linux"
"stopping services in Linux"
