Hi,
I have a user who left, their account was deleted and the data moved to the admin account.

They are coming back. Can I recreate the user, then, having stopped the server, move the folder from the admin account back to the correct folder directly in the mail store?

Yes that should be possible. Then reindex the mailbox after moving the folders
