Hi.

Why EndPointSecurity service needs run under admin credentials, and not as LocalSystem or Network Service accounts?

The service needs to be able to read from Active Directory, the local registry, and the registry of the machines it is being deployed to.  Also the service account needs to be able to access the remote machine's 'C$' share. This type of access usually requires domain admin credentials.
