There is different levels of logging that you can configure on your SMTP server within IIS. Click on Default Virtual SMTP server and enable logging. There are different types of logging. I use W3C Logging, but microsoft had recommended to me that I use NCSA format as it contains more usable information. The only thing is, file sizes are MUCH MUCH larger with these type of log files. You can also customize further what options you want logged in those files. Click on Properties next to the active log format, and you can choose to include any number of optional information under the advanced tab. On the messages tab, you can send NDRs to a user account on your domain...it's up to you where you want those NDR reports to go. Hope that helps somewhat.
